Lindsay Keir, today's baker, bought Wooley's bakery in the 1980s. Small family bakeries were struggling to survive against the competition of cheap, mass-produced, cut-price bakery chain bread sold in supermarkets. The craft bakery on Arran was almost at a standstill. Most of the baking on the shelves was bought-in from the mainland. Today, this trend has been reversed and a varied range of rolls, breads, cakes, biscuits - including the nationally famed Wooleys oatcakes - are made using technology that strikes a compromise between traditional and modern methods. "'I wanted to get away from the old, unsocial nightshift baking," says Lindsay. "Now only one baker works through the night, firing rolls and making hot plate pancakes and scones, while the bread is prepared the day before, held in a chill room, and baked in the early morning." Besides the daily fresh baking choices, there is also a brisk trade in take-away filled rolls, hot pies, hot soup, tea and coffee as well as Arran Dairy Ice Cream.
