Dairies, Making ice cream is a new venture for Arran Dairies, already the main supplier of milk on the island. It's a small dairy operation which pasteurises, bottles and supplies milk and cream from the rich grasslands in the South of the island. Unlike most milk from large dairy plants, the fat globules in this milk are not broken up into minute particles in a homogenisation process. Instead, leaving the fat globules whole means the creamy taste of the milk is preserved, as well as the old-fashioned 'cream line'. When the generation who were brought up on this unhomogenised milk say that it tastes better than modern supermarket milk, they are not just being sentimental. Also, unlike most milk from large industrial plants, the fat content in Arran milk is not standardised to 3.5%, but varies according to the season, ranging from 3.9% in the winter to 4.3% in the summer. It's this special Arran milk which is used for the 'Dairy' Ice cream, made in batches of 200 litres in a production unit which increases the volume by around 60% making a light textured, Italian-type ice cream, refreshingly cold yet with a satisfying creaminess. Flavourings
range from pistachio and praline to a classic strawberry made with the
crushed fruit; 'cranachan' with raspberries and Wooley's oatcakes; honey
ripple, spiced plum, strawberry and black pepper, chocolate and mint. Product Range: Besides natural 'Dairy', a variety of other flavours. The company also work with chefs to create restaurants 'own designed' range. Distribution:
