SCOTS RAREBIT

INGREDIENTS
6 oz Arran Dunlop cheese, grated
3 -6 fl oz green mantle ale
1 tablespoon Arran whole grain mustard
1 tablespoon flour
Knob of butter
METHOD
Make a roux with the butter, flour and beer. Stir in the mustard and
cheese. Allow the mixture to cool and firm, then pipe or spread onto
garlic toast or Arran Oatcakes, then grill to a bubbling golden brown.
Serve immediately.
